Recently we have learned that wine is good for our health. It has been reported that a reasonable amount of wine drank in moderation can be healthy.  Wine contains antioxidant properties that benefit our health when added to our diet. Red wine contains resveratrol, a compound that likely contributes to its benefits-and, may activate genes that slow cellular aging. Also, for those that abstain from alcohol, cooking with wine leaves only the essence of flavor behind. To your health!!
 
 
 

WINEABLE GIFTS Planked Salmon
 
 
 
Ingredients 
  •  1 1/4 pounds salmon fillets, 1-inch thick 
  •  1 cup bottled champagne vinaigrette dressing 
  •  2 tablespoons Dijon mustard
  •  Cedar or alder grilling plank soaked in equal parts of red wine and water for at least 2 hours
  •  Salt and pepper
  •  1/3 cup finely chopped fresh herb leaves (parsley, oregano, basil, marjoram, etc.) I use basil,parsley and thyme because I always have it in the garden. But feel free to use your favorite herbs. In a large zip-lock bag, combine salmon, champagne vinaigrette dressing, and Dijon mustard. Squeeze out air and seal bag. Gently massage bag so that everything is thoroughly combined. Marinate in refrigerator for 30-40 minutes.
 
 
 
Grill Method:Prepare grill for direct cooking over medium-high heat. Remove salmon from marinade and discard marinade. Place on wine-soaked plank, season with salt and pepper and cover with herbs. 
 
Place planked salmon on grill. Cover grill and cook for 8 to 12 minutes or until done. Salmon will be flakey when tested with a fork. Remove from grill and serve hot.
 
Oven Method: Marinate and prepare salmon as directed. Preheat oven to 450 degrees F. Remove salmon fillets from marinade and place on a baking sheet lined with foil. Season with salt and pepper and cover with herbs.Cook for 8 to 10 minutes, or until flakey when tested with a fork. Remove from oven and let rest tented with foil for 5 minutes. Serve hot. ENJOY!

Always remember to cook with a good quality wine. Wine that taste bad to the palate will obviously taste bad in your food. When cooking with wine I often use Chardonnay, Pinot Grigio or Cabernet. These wines are a good choice because they are less aromatic wines and therefore are better for cooking. Typically a dryer wine is your safest bet. Happy Cooking!

 
Tarragon Chicken with Red Wine 
 
   


Chicken:
  • 2 1/2 pounds boneless skinless chicken breast
  • Coarse salt and pepper
  • 2 tablespoon extra-virgin olive oil
  • 2 tablespoons butter
  • 2-3 shallots, chopped
  • 1 carrot chopped into fine dice
  • 1 teaspoon sugar
  • 12 crimini (baby portobello) mushrooms, chopped  
  • 4 to 5 sprigs fresh tarragon,  chopped, about 2 tablespoons
  • 1 cup flat-leaf parsley leaves, chopped 
  • 1 1/3 cups good dry red wine, something you like to drink 
  • 1(15-ounce) can chunky style crushed tomatoes or diced tomatoes in puree 
EggNoodles:
  • 3/4 pound extra-wide egg noodles
  • 2 tablespoons butter, cut into bits
  • 2 sprigs fresh tarragon, leaves chopped, about 1 tablespoon
  • 1-cup flat-leaf parsley leaves, chopped, about 2 tablespoons
  • Salt and freshly ground black pepper
Directions:
  
Bring a large pot of salted water to a boil for the noodles.  
Season chicken generously with salt and pepper. In a large skillet over medium high heat brown pieces of chicken in oil for 2 or 3 minutes on each side and remove to a plate.
Return pan to stove and reduce heat to medium. Add butter to the pan and shallots, carrots and mushrooms. Saute 3 to 5 minutes until mushrooms darken and carrot bits are fork tender. Add sugar, tarragon and parsley and stir. Add wine and reduce liquid for 2 minutes. Add tomatoes to your sauce and stir to combine. Add chicken back to the pan and simmer chicken in sauce for 6 minutes or until chicken is cooked through and juices run clear.
 
Meanwhile, cook the noodles until just tender, about 6 minutes. Drain and transfer to a serving bowl. Toss the noodles with butter, tarragon, parsley, and season with salt and pepper.
 
Serve chicken with buttered egg noodles tossed with fresh herbs. Enjoy!

Stuffed Tomatoes
(Tastes just like a BLT!):

  • Cherry or Grape Tomatoe
  • 3/4 lb. Bacon (fried very crispy)
  • 1/3 cup Mayo
  • 2 TBSP. fresh Parsley
  • Ground Pepper to taste
Slice tomatoes in half and scoop out centers. Mix all ingredients.   Stuff tomatoes. Garnish with parsley.  Enjoy!
 
 
Brioche Tea Sandwiches:
  • Mini Brioche Rolls (Nice and fresh)
  • 1-Jar Chutney  ( I like Trader Joe's Mango Ginger Chutney,but Majoy Grey's makes some real tasty chutney)
  • 1- lb. very good extra-sharp Cheddar
   
Cut each roll in half crosswise. Liberally spread the bottom half with Chutney.
 
Place a thick slice of cheddar cheese on top and cover with top half of roll. 
  
Simple, yet delicious!!
 
 
Gourmet Stuffed Mushrooms:
  • 24- Cleaned mushrooms,stems removed
  • 1- lb. pork sausage
  • 4-TBSP. Champagne pepper jelly (I like Millicent's red or yellow pepper jelly
Mix pork with the pepper jelly. Stuff the mushrooms with the mixture. Preheat oven to 375 degrees.
  
Place mushrooms on ungreased or parchment lined cookie sheet and bake for 12-15 minutes.
  
They're a definite winner!!!
