Italian Wine Cookies
Love at first crunch!  These Italian wine cookies are perfect for dunking in wine
 or just munching as an afternoon treat. These treats are low in saturated fat,
 as they contain no butter or eggs.


Italian Wine Cookies
Makes about 36 cookies

    2    cups all-purpose flour
    1/2    cup sugar
    2    teaspoons baking powder
    1/4    teaspoon salt
    1 1/2    Tablespoons aniseed (also
        called anise seed)
    1/2    cup white wine
    1/2    cup olive oil

CINNAMON SUGAR
    6    Tablespoons sugar
    3    Tablespoons ground cinnamon

PREHEAT the oven to 350°F. Line 1 or 2 cookie sheets with parchment
paper.

WHISK together the flour, sugar, baking powder, salt, and aniseed in a
large bowl. Using a wooden spoon, stir in the wine and olive oil until
fully combined.

FOR THE CINNAMON SUGAR~ Whisk together the sugar and cinnamon
in a shallow bowl.

PINCH off 1-inch chunks of dough and roll them between your hands

(or on a flat surface) to form thin ropes about 6 inches long and about

the thickness of a pencil. Gently toss in the cinnamon sugar to coat.

Shape the ropes into an S and place on the prepared sheet(s), arranging them
 about 1/2 inches apart.
 
Bake for 17 to 20 minutes or until the cookies are browned and feel mostly firm.
They will firm up more as they cool; the longer time yields a crunchier
 and slightly darker coookie. Enjoy!
