Chicken with Black Beans and Sweet Potatoes
A few years ago I cut out this wonderful crockpot recipe in a Good Housekeeping magazine. After a few changes I have come up with a great go-to recipe that you can get in the crockpot in about 20 minutes.


Chicken with Black Beans & Sweet Potaoes

Ingredients:
3lbs. bone-in skinless chicken thighs(I usually have to buy thighs with the skin on and remove it with kitchen shears)
2 tsp. ground cumin
Salt & Pepper
1tsp. smoked paprika or chopped chipotle chilies in adobo sauce(I use the chipotle chilies)
1/2tsp. ground allspice
1cup chicken broth
1/2 cup salsa( I use Pace Picante Sauce)
3-4 large cloves of garlic chopped
2 cans (15oz.) of black bean rinsed
21/2 lbs. sweet potaotes or yams cut into 2inch chunks
Cilantro and Lime Wedges

Preparation:
Sprinkle thighs with Salt & Pepper and 1/2tsp of cumin.
Brown chicken thighs in large skillet on high heat about 5 min.

Layer sweet potatoes and black bean on bottom of crock pot.
Place chicken on top of potatoes and black beans.

In same skillet combine paprika or chipotle chilies, allspice, chicken broth, salsa, garlic and 1 1/2tsp. cumin. Stir till all the bits are up from the bottom of the pan, about 1 minute.
Pour broth mixture over chicken in crock pot.

Cook on low for 7-8 hours. Sprinkle with cilantro and serve with lime wedges. Enjoy!

Yum!
I love all those flavors! This is a great dish. :-) Very pretty, too. I'm always amazed how a little salsa added to a dish can make everything come together. Crockpot dishes are the best.
